Mmmm espresso popsicles! If you’re a fan of coffee ice cream, you’ll love these popsicles! You get the rich flavor of the coffee combined with a creaminess which makes these taste like ice cream. I’ve loved whipping these up over the years and I thought I’d make them in honor of National Coffee Day coming up this week.
I’ve always been one to ask why? what? who? how? I love to understand the history of something, or why things are the way they are. With that, I looked in to what espresso is and what makes it different.
The difference between espresso and coffee are the size of their grounds and method of brewing. Espresso is made by forcing steam through finely ground coffee beans. Coffee is made by water being poured over coarse grounds. The espresso process extracts every last essence of the beans, that results in that rich deep taste and aroma all espresso drinkers covet.
So how did all this start? Coffee has a long involved interesting history which is a bit much to explain in this blog but here’s the short version. A goat herder in Ethiopia noticed his goats eating berries from a tree which kept them up all night.
The herder passed this discovery on to the Abbot of a local monastery, who in turn made a drink which he gave to the monks. This allowed them to stay alert for long hours of evening prayer. Word of this drink spread from Ethiopia to the Arabian peninsula…then on to Europe.
Tea continued to be the favored drink in the New World until 1773, when the colonists revolted against a heavy tax on tea imposed by King George III. The revolt, known as the Boston Tea Party, would forever change the American drinking preference to coffee.
With all the attention we Americans give our love of coffee you’d think we would have to be in the top 10 or at least top 20 of coffee consumers world wide. We don’t even make the Top 20 list. Here is the list of those countries and their coffee consumption ranking:
1. Finland – 12kg per capita per year
2. Norway – 9.9
3. Iceland – 9
4. Denmark – 8.7
5. Netherlands – 8.4
6. Sweden – 8.2
7. Switzerland – 7.9
8. Belgium – 6.8
9. Luxembourg – 6.5

So now, on to this delicious recipe for espresso popsicles:
- 2 2/3 cup milk
- 1/3 cup granulated sugar
- 4 Tbsp instant espresso powder
- 2/3 cup heavy cream
- In a pot over low heat, warm the milk. (Be careful not to boil it).
- Whisk in the sugar and espresso powder until incorporated and dissolved.
- Remove mixture from the heat and let it cool slightly (roughly 10 minutes).
- Stir in the heavy cream. Then refrigerate the mixture until cool. Stir occasionally to prevent a skin from forming.
- Pour mixture in to the popsicle mold, add popsicle sticks, then freeze completely.
Note: I accidentally used espresso instead of instant espresso. Hence the espresso that settled at the bottom while freezing. Make sure you use instant espresso so it incorporates through the popsicle.
